Shrimp: Here is another one of our favorites. It's easy enough to prepare and is a delightful change from the usual crab-cakes. Don't get me wrong, crab-cakes are a favorite also.

SHRIMP CAKES (Chien Hsia Ping )
We found it in an old, out of print, chinese cookbook, written by someone who had lived in china. The author obviously suggests using chopsticks during the preparation but I found a wooden spoon to work equally well.

Ingredients:
1-1/2 lb. pounded shrimps
1 slice ginger minced
1 small piece minced Chinese onion
10 pieces water chestnuts (remove skins and pound)
1 whole egg
a dash of pepper
1-1/2 teaspoonfuls salt
1 heaped teaspoonful cornflour
1/3 cup cold water or stock
1 Chinese cabbage, coarsely cut and part boiled

Method of preparation:

Mix all the above ingredients together with chopsticks. Shape into small flat cakes, and saute in hot lard until a nice golden colour on both sides.

Using the same lard fry the cabbage with a teaspoonful of salt for two minutes. Replace the shrimp cakes and fry altogether for another minute: then serve.

For those not wanting the authentic flavor, a lard substitute or shortening may be used.

    Grind shrimp. Soften cheese at room temperature.

    Combine shrimp, cheese, chili sauce, Worcestershire sauce, salt, and cay­enne pepper.

    Blend into a paste. Spread on crackers, toast, orbread.

    Garnish. yields 48
